Pasta Night, Round 2

If you boiled too much pasta for dinner last night, don't throw out the leftovers! Here are seven genius ways to use cooked noodles of any shape and size to create a whole new dish. 

Frittata

Saute noodles (and sauce) in olive oil until crispy, then add beaten eggs and cook till set. Top with cheese and broil till browned.

Stir-Fried Noodles

Treat cooked noodles like leftover rice and stir-fry them quickly in a hot pan with chopped veggies and leftover cooked meat. Hit with soy sauce to finish. Long noodles are the classic choice here, but short pasta shapes like orzo would work well too.

Pasta Bakes

Leftover filled pastas like ravioli and tortellini do great baked in a casserole. Make a simple white sauce (or use leftover red), add veggies and cheese, and bake.

Muffins

Fold leftover pasta along with chopped cooked veggies into beaten eggs, then pour into muffin tins and bake until set for an easy-to-take-anywhere breakfast.

Fritters

Toss leftover cold pasta with beaten eggs, then fry, flipping once, till crispy on both sides and heated through. Top with a fried egg.

Pie

Stand up cooked rigatoni noodles in a springform pan, pour sauce and cheese over them, and bake. Unmold, slice and serve.

Pizza

Take a cue from the old-school slice spots and top a classic pizza crust with leftover baked ziti. Dot with sauce and more cheese, and bake.
