Garlic Tater Tots with Roasted Garlic Aïoli

These crispy tater tots are for garlic lovers. The tots are baked with a garlic powder coating, then tossed in garlic butter when they come out of the oven. Then for maximum garlic flavor, they’re served with a rich, lemony aioli loaded with sweet roasted garlic.

  1. Preheat the oven to 450˚ F. Toss the tater tots with the garlic powder and spread on a baking sheet. Put the garlic head on a small sheet of foil and drizzle with the olive oil. Wrap and add to the baking sheet. Bake until the tots are deep golden brown and crisp and the garlic is golden and tender, 35 to 40 minutes.
  2. Meanwhile, melt the butter with the minced garlic in a small saucepan over medium heat. Set aside. 
  3. Make the aïoli: Squeeze the roasted garlic cloves from the skins and pulse in a mini food processor with the mayonnaise, lemon juice, a pinch of salt and 1 teaspoon pepper until smooth. Transfer to a small bowl for dipping. 
  4. Transfer the tots to a large bowl. Warm the garlic butter over low heat if it has cooled, then pour over the tots. Add the parsley and Parmesan and toss to coat. Transfer to a platter and serve with the roasted garlic aïoli.
