This Giant Latke is Perfect for a Crowd

Crispy, golden and delicious, latkes are a staple of Hanukkah celebrations. They’re also a labor of love and can be incredibly time-consuming — so not ideal when celebrating with lots of friends and family. After all, you don’t want to end the festivities with a sore wrist from flipping so many latkes!
That’s why we cooked up a super-easy alternative to individual latkes: Food Network Kitchen’s Pan-Fried Giant Latke. This skillet-sized latke easily feeds six (or more) and fries up just as crispy as a single-sized portion. The secret? After combining the latke mixture, immediately move the latke into a preheated and oiled skillet. The longer the mixture sits before cooking, the more water it will purge, which leads to a soggier texture.
Our recipe also includes caramelized apples for topping (although you can still use applesauce if you prefer). Once the latke is cooked, we recommend topping it with the apples, sour cream and fresh herbs before serving — but you can certainly serve those on the side and let guests customize their latke slices.
Plus, this crowd-sized latke is ready in just 30 minutes from start to finish, which leaves plenty of time for eating, celebrating and lighting the menorah with friends and family. Hanukkah is a time to gather and rejoice with your loved ones — and what better way to do that by sharing a beloved dish?
