Beyond basic sustenance, food has the power to define a place, from the flavors of time-honored ingredients to the customs of eating that are embedded in the culture. Cities and countries around the world are synonymous with certain dishes, and it’s not exactly easy to replicate them outside of their homes. But on the all-new series The Globe, streaming exclusively on discovery+ starting July 17, that’s exactly what Robert Irvine will challenge chefs to do as they pay homage to a world of flavors without leaving the kitchen.

Robert will oversee the competition and Daniela Soto-Innes will serve as the resident judge, and in each round they’ll (virtually!) transport the contestants to a new locale to kick off the next challenge. As competitors are tasked with creating authentic dishes to honor the setting, internationally acclaimed chefs with ties to those regions will be on hand to educate, inspire and, of course, taste their offerings. Those guest judges are bona fide experts in this cuisine, so they know exactly what should — and should not — be included, and how the dishes should be prepared and presented.

From Paris, France and Addis Ababa, Ethiopia to Florence, Italy and Lima, Peru, The Globe will shine a light on the local ingredients and traditional dishes of cities big and small. Look out for Masaharu Morimoto, Jazz Singsanong, Eric Adjepong, Dominique Crenn and other big-name international chefs to join the journey this season.

To win big on The Globe, chefs must do more than turn out a delicious meal. The judges are expecting high-quality dishes that — and this is the key — stay true to the history and tradition of the theme city.
